Simple Tea-Infused Vegan Almond Cake Recipe

  • 1 cup Oat Flour (made from 1-1/4 Cups Oats)
  • 3/4 cup Almond Meal (made from 1 Cup Whole Almonds) 
  • 4 Tbsp Ground Flaxseed, plus 1/2 Cup Water 
  • 1/2 cup Oat Milk (or other dairy-free milk of choice) steeped with 1 Tea Bag Yogi Sweet Clementine Stress Support Tea
  • 1/2 cup Coconut Sugar
  • 2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1 Tbsp Vanilla Extract
  • 1/2 cup Slivered Almonds


  • Preheat the oven to 350F, and line a 9″ springform pan with parchment paper.
  • In a small bowl, combine the ground flaxseed with the water and let sit for 5-10 minutes to create a “flax egg.”
  • In a microwave-safe bowl, heat the oat milk (or dairy-free milk of your choice) for 1 minute, or until just boiling.
  • Add the Yogi® Sweet Clementine Stress Support Tea tea bag, and let it steep while you prepare the remaining dry ingredients.
  • In a medium bowl, whisk together the almond meal, oat flour, coconut sugar, baking powder, and baking soda until combined.
  • Remove tea bag from now-steeped milk, and add it to the bowl with dry ingredients, along with the flaxseed egg and vanilla extract. Mix until thoroughly combined.
  • Once combined, the batter should be thick (you will not be able to pour the batter into the pan.) Spoon the batter into the middle of the springform pan; the spread the batter with your scoop so that it reaches the edges of the pan.
  • Sprinkle the slivered almonds on top of the Simple Vegan Almond Cake batter, and then place pan into the oven to bake for 35-42 minutes, or until the toothpick comes out clean.
  • Allow the Simple Vegan Almond Cake to cool for about 15 minutes before slicing and serving.
