Vegan Green Tea Blueberry Crumble Bar Base:
- 1 1/2 cups Cassava Flour
- 1/2 cup Coconut Oil, softened
- 1/3 cup Chilled Water
- 1/3 cup Maple Syrup
- 1 tsp Vanilla Extract
Vegan Green Tea Blueberry Crumble Bar Filling:
- 2 cups Fresh Blueberries
- 1.5 cups Water
- 1/3 cup Arrowroot Powder
- 1 Yogi Green Tea Blueberry Slim Life tea bag
Vegan Green Tea Blueberry Crumble Bar Crumble Topping:
- 1 cup Sprouted Gluten-Free Oats
- 1/2 cup Cassava Flour
- 1/2 cup Coconut Oil, melted
- 1/3 cup Maple Syrup
- 1 tsp Vanilla Extract
Instructions
To Prepare the Vegan Green Tea Blueberry Crumble Bars:
- Bring the blueberries and water to a boil in a large pot on the stove
- While water is boiling, sift in the Arrowroot Powder and whisk to combine. Reduce the heat to a simmer.
- Add the Yogi Green Tea Blueberry Slim Life tea bag to the pot and allow the mixture to steep with the tea for 3 minutes.
- Remove the tea bag and keep the mixture at a simmer while you prepare the base.
To prepare the base for the Vegan Green Tea Blueberry Crumble Bars:
- Preheat the oven to 425F and line an 8×8 baking pan with parchment paper.
- In a large bowl, use a fork or a pastry cutter to cut the softened Coconut Oil into the Cassava Flour until the mixture resembles crumbly sand.
- Add in the chilled Water, Maple Syrup, and Vanilla Extract, combining the ingredients until the mixture reaches a thick dough consistency.
- Press the dough into the base of the baking pan. Using your fingers, spread the dough until it touches the edges of the pan and covers the bottom. Using a fork, pierce several holes into the dough. Place the pan with dough into the fridge to chill (approximately 10 min.).
- Remove the chilled pan and dough from the fridge and place it into the oven. Bake 12-13 minutes, or until the crust is lightly golden.
- Remove the pan with crust from the oven and allow to cool. Reduce the oven heat to 375F.
Prepare the filling, crumble, and assemble the bars:
- Remove the blueberry filling from the stovetop. Using the back of a long spoon or spatula, mash the cooked berries. Set the filling and crust aside while you prepare the crumble.
- In a large bowl, whisk together the Cassava Flour and Oats. Add in melted Coconut Oil, Maple Syrup, and Vanilla Extract. Combine until the mixture reaches the consistency of a sticky batter. Set crumble mixture aside.
- Assemble the bars by pouring the blueberry filling into the cooled bar crust. Then, using a spoon, add spoonfuls of the crumble on top of the blueberry filling.
- Place the assembled bars back into the oven and bake for 27-32 minutes, or until the oat topping is lightly golden in color. Remove from the oven and allow the bars to set for 30 minutes.
- Slice and serve warm.
