Fresh, juicy berries are always a welcome sign of summer.

From tart raspberries to sweet, plump blueberries, there’s no berry we don’t love. We think of these flavorful fruits as nature’s candy, and find ourselves adding them to iced tea, chia pudding, and everything in between – including dessert!

This summer, we’re whipping up this Vegan Green Tea Blueberry Crumble bar for all of our backyard BBQs and picnics. These plant-based bars have all the ooey, gooey blueberry flavor of your favorite pie, without any dairy or eggs! Plus, the addition of Yogi Green Tea Blueberry Slim Life tea in the filling imparts not only wellness-supporting antioxidants* but extra fruity, blueberry flavor, too!

Yogi Vegan Green Tea Blueberry Crumble Bars

What You’ll Need:

Vegan Green Tea Blueberry Crumble Bar Base:

  • 1 1/2 cups Cassava Flour

    1/2 cup Coconut Oil, softened

    1/3 cup Chilled Water

    1/3 cup Maple Syrup

    1 tsp Vanilla Extract

Vegan Green Tea Blueberry Crumble Bar Filling:

  • 2 cups Fresh Blueberries

    1.5 cups Water

  • 1/3 cup Arrowroot Powder

  • 1 Yogi Green Tea Blueberry Slim Life tea bag

Vegan Green Tea Blueberry Crumble Bar Crumble Topping: 

  • 1 cup Sprouted Gluten-Free Oats

  • 1/2 cup Cassava Flour

  • 1/2 cup Coconut Oil, melted

  • 1/3 cup Maple Syrup

  • 1 tsp Vanilla Extract

Directions:

To Prepare the Vegan Green Tea Blueberry Crumble Bars:

1. Bring the blueberries and water to a boil in a large pot on the stove

2. While water is boiling, sift in the Arrowroot Powder and whisk to combine. Reduce the heat to a simmer.

3. Add the Yogi Green Tea Blueberry Slim Life tea bag to the pot and allow the mixture to steep with the tea for 3 minutes.

4. Remove the tea bag and keep the mixture at a simmer while you prepare the base.

To prepare the base for the Vegan Green Tea Blueberry Crumble Bars:

1. Preheat the oven to 425F and line an 8×8 baking pan with parchment paper.

2. In a large bowl, use a fork or a pastry cutter to cut the softened Coconut Oil into the Cassava Flour until the mixture resembles crumbly sand.

3. Add in the chilled Water, Maple Syrup, and Vanilla Extract, combining the ingredients until the mixture reaches a thick dough consistency.

4. Press the dough into the base of the baking pan. Using your fingers, spread the dough until it touches the edges of the pan and covers the bottom. Using a fork, pierce several holes into the dough. Place the pan with dough into the fridge to chill (approximately 10 min.).

5. Remove the chilled pan and dough from the fridge and place it into the oven. Bake 12-13 minutes, or until the crust is lightly golden.

6. Remove the pan with crust from the oven and allow to cool. Reduce the oven heat to 375F.

Prepare the filling, crumble, and assemble the bars:

1. Remove the blueberry filling from the stovetop. Using the back of a long spoon or spatula, mash the cooked berries.  Set the filling and crust aside while you prepare the crumble.

2. In a large bowl, whisk together the Cassava Flour and Oats. Add in melted Coconut Oil, Maple Syrup, and Vanilla Extract.  Combine until the mixture reaches the consistency of a sticky batter. Set crumble mixture aside.

3. Assemble the bars by pouring the blueberry filling into the cooled bar crust. Then, using a spoon, add spoonfuls of the crumble on top of the blueberry filling.

4. Place the assembled bars back into the oven and bake for 27-32 minutes, or until the oat topping is lightly golden in color. Remove from the oven and allow the bars to set for 30 minutes.

Slice and serve warm.
